Breakfast Egg Cups
Make these in muffin cups and they are easy to grab and go for breakfast—either hot or cold. This is the doubled version, which makes about 16 muffin cups.
· 1 whole package of ground turkey or turkey sausage, over 1 lb.
· 1 yellow, red or orange bell pepper, chopped
· 1 whole medium onion, chopped
· 1 package of sliced white mushrooms
· Salt and pepper
· 10 large eggs
· ½ cup shredded cheddar or Mexican cheese (reduced fat if you want)
· Sprinkle of fresh chives, chopped
Preheat the oven to 350°F. Line a 12-cup (or two 6-cup) muffin pan with paper baking cups. Using only one paper baking cup per muffin is best.
In a medium non-stick skillet over medium-high heat, cook the turkey, pepper, onion and mushrooms for 5 minutes or until the turkey is no longer pink. Add salt and pepper (a pinch of salt and a few grinds of pepper is fine). Spoon this mixture into a larger bowl and cool slightly, about 5 to 10 minutes (if the turkey is not cooled it will cook the egg, which is bad). Stir in the eggs. Evenly divide the mixture among the prepared muffin cups. Sprinkle with cheese and chives.
Bake for 20 to 23 minutes, or until the egg is set.
Remove from oven. Let the egg cups cool in the pan for about 5 minutes. Remove the egg cups and place them in a Tupperware container and refrigerate. The egg cups will last for up to a week.
Reheating instruction: Leave the egg “muffin” in the paper cup. Heat in the microwave loosely wrapped in a paper towel for 25 to 30 seconds. Peel off the paper cup and enjoy! Two egg cups makes a great breakfast.
I thought cheese was off-limits in Paleo?! My husband will not touch the stuff. I am so confused!! I am trying to make more Paleo meals for him, but when I see recipes like this that includes cheese, I don’t know what to think! help!
Where are you getting your recipes from? I have never seen any recipe that calls for cheese from a good paleo site. I have heard that some use goat cheese but I am not familiar with it and if it is considered good or bad??
Put shredded coconut in a blender. Next pour blended coconut into a bowl, add the egg and stir well. You’ll end up with a batter than can be shaped like a pancake.
Grease a skillet with some olive oil and fry the batter. Flip to cook both sides. Now that your “Paleo bread “is ready, just pile it together with the omelet and shredded lamb. The result? Paleo diet breakfast meal that is sinfully yummy!
Here is a broccoli/chicken dish that is easy and tasty:
In a wok or big pot, over medium heat, put olive oil and two cloves garlic. Add chopped skinless, boneless chicken breasts. Add 1 can of chicken broth. Add lots of fresh broccoli crowns. Add chopped sun dried tomatoes. Add 1/2 cup white wine. Add basil and crushed red pepper. Salt and pepper to taste. If you’re not on the diet, you can add bow tie pasta.
4 oz sliced chicken breast
4 strawberries sliced
1/4 red pepper diced
1/4 cup steamed and chilled artichoke hearts
1/2 cup steamed and chilled green beans
baby spinach
spring salad mix
1/2 sliced tomato
Squeeze juice of 1/2 lemon
It looks and tastes like eating out but without all the bad stuff. Bon apetit.

1 cup spinach packed
*cook the spinach down in a little water first, take out of pan cook eggs omelet style add spinach and turkey.
Top it off with a slice of fresh tomato, 1/4 onion, cilantro, 1/4 bell pepper, 1/4 lime.
For you carbohydrate, slice a kiwi and 6 strawberries, blend small portion of watermelon(1/4 cup serving) drizzle over fruit for fun flavor

Breakfast of Caveman Champions (those that didn’t get eaten by a saber toothed tigers) : I use a blendtec blender and combine 1/2 cup of frozen blueberries, 5 whole frozen strawberries, 1/2 a banana, 1 oz of raw almonds, 2 oz of raw walnuts, 1/2cup of raw spinach, 1/2 a scoop of Vanilla Protein powder (caveman approved), water to the top, turn it on, drink it straight from the blender for a more neanderthal-like effect, and you won’t be hungry again for 4 to 5 hours…oh, don’t worry, you can’t taste the spinach.
Crab Cakes:
1 egg
3 egg whites
1 tsp dry mustard
1 tsp Worcestershire sauce
1 tsp fresh lemon
1 pound crab meat, flaked and cut small
1/4 cup copped almonds
Mix all of the above well.
Press into 1/4 or 1/3 cup measuring cups to get all the same size. then press into patties
flour with almond flour on each side
Put enough oil in pan to cook patties for 4 minutes on each side, then put in oven at 350 for 10 minutes.
Sauce:
2 large roasted red bell peppers, roasted and peeled
1 tbsp. fresh dill
1 tbsp. drained capers
1/4 cup cocnout juice
Blend all the above and pour over crab patties(optional they are good without too)! Enjoy
5oz chicken breast
15 almonds copped up
1 tbsp. balsamic vinegar
8 asparagus…i think i spelled that wrong
In a sauce pan put chicken breast in with one cup water, put a lid on it and turn it low, cook chicken until done. Add vinegar and almonds cook until it carmelizes. Pull out and add 1/4 cup water and add asparagus, cook until tender.
Last challenge James posted a very tasty recipe called “Jimmy’s Taco Salad”. Tory and I enjoy this at least once a week.
1 lb of ground turkey (extra lean)
1 can Rotel Original
9 oz bag spinach
1 tbsp minced garlic
2 avocados (slice them up to put on top of salad)
taco seasoning mix (mix all together in small bowl)
1 tbsp minced dry onions
2 tsp chili powder
1/2 tsp sea salt
1 tsp ground cumin
1 tsp cayenne pepper
cook ground turkey in large skillet. Get rid of any excess oil. Mix in Rotel with cooked meat and then add garlic. Let simmer for a few minutes and then add taco seasoning. Let simmer a little more and your’re good to go. Put a couple handfuls of spinach on a plate and dump some taco meat on top. Don’t forget the sliced avocados. Serves 2-3 depending on how hungry you are.
I prefer two cans of Rotel, 1 habenero 1 mild. The only drawback about using Rotel is that it does contain a large amount of sodium. So, if you are keeping a watchful eye on your sodium intake just stick to one can.

You should aim for .5 grams of EPA+DHA for every 10 pounds of body weight. * For example : I weight 220 lbs. therefore I should take 11 grams of fish oily daily. (220 lbs./10 = 22 x .5 = 11 grams)
Ok, so Ketchup is out. So, don’t use it. Take a can of Contadina Tomato Paste (Ingredients = Tomatoes) mix with finely grated fresh horseradish (or prepared but there is some sugar in the prepared), lemon juice, vinegar, sea salt and cracked pepper.
Finely chop 8 celery stalks
dice one whole avocado
Mix tomato/horseradish mixture in the chopped celery, then fold in the avocado, pepper and a little more sea salt to taste. (fine, if you don’t think the cavemen used natural salts to season their meats, you go on thinking that. I for one sweat a whole can of Morton’s per workout so I’m not too salt sensitive)
Boil/steam shrimp or use pre-cooked shrimp. Detail some and leave a few with tails on for a presentation. When I boil shrimp I use, 1 lemon cut in half and squeezethe juice in the pot, 3 TBSP Old Bay Seasoning, shake some mustard seed, celery seed, whole pepper corns, cracked pepper, Emeril’s Original Essence, Sweet bay leaves and garlic salt Put about 3 or 4 inches of water in the pot. Bring pot to boil, drop in shrimp whether frozen or thawed, cook until they become translucent (white). Strain into a collander and cover with ice until cool.
Take a martini glass, or other long stem glass with a mouth wide enough to dig into, spoon about 2 oz of the cocktail sauce/celery/avacodo in the bottom, push the tailless shrimp into the mixture, add another layer of sauce, then put the tail on shrimp around the glass and one in the middle. Serve with a glass of nice Pinot Grigio or a glass of water.

Paleo Friendly (if you ignore the salt) Easter Dinner
Bake a spiral cut ham for 2 hours or until hot, reserve the drippings (no glaze)
Head of Cauliflower steamed until almost overcooked. 4 ounces of chicke broth, sea salt and pepper to taste. Blend Cauliflower and broth until smooth, and viola, faux mashed potatoes.
Steam one Artichoke with garlic, pepper and sea salt, when finished, squeeze a lemon over artichokeand reserve some for the heart.
For dessert, cut thin slices of apples, place in a baking dish with a light olive oil coating, drizzle honey over apples, squeeze one orange over apples and sprinkle with cinnamon. Bake at 350 until apples are tender.
Way simple idea, i like simple Make hobo dinners using turkey meat and veggies. Add some seasonings and voila, it’s like camping! We just cook the meat in olive oil, add carrots, celery and onion, mix all together then put a little cheese and whatever else you want. (soy sauce, ketchup etc) You could do this in foil in the oven, or over a fire! We use cheese, but you don’t have to. Make it how you wish, just a new idea for summer!!
I have a great muffin recipe that is very versitile. The basic batter mix can be used with blueberries, apples, any fruit you want. It is great for those hurried mornings to just grab and go. Here is the basic batter recipe… after that, just add what ever fruit you like (my favorite is diced apples sprinkled with cinnamon)
1 C blanched almond flour 2 Tbs grapeseed oil
1 C almond meal 1/4 C honey
1/2 tsp sea salt 1/4 C maple syrup (organic)
1/2 tsp baking soda 1 egg
1/4 C arrowroot powder 1 Tbs vanilla extract
2 Tbs applesauce 2 C ANY FRUIT (as dry as possible)
Preheat oven to 350. LIne muffin tins with cups, or spray well with baking spray and dust wiht almond flour.
In a large bowl, combine flour, meal, salt, baking soda, and arrowroot powder. In a medium bowl, whisk together applesauce, grapeseed oil, honey, maple syrup, egg, and vanilla. Stir wet ingredients into dry ingredients until thoroughly combined, then gently fold in the fruit. Spoon the batter into prepared muffin tins.
Bake 30 – 35 minutes or unitl the tops are golden brown and a toothpick comes out clean. Let cool in the tins for 10 minutes before removing. Store in the refigerator.
Another recipe that I found that we have enjoyed is paleo Barbeque sauce. It can be sweet by adding honey or agave necgtar, or spicy by adding hot sauce. Either way, it is great on ribs, chicken, any meat really. Here it is.
1 6oz can tomato paste 2 Tbs Dijon or yellow mustard
1 to 1 1/2 C beef stock (to desired thickness) 2 Tbs apple cider vinegar
3 cloves garlic 1 Tbs extra virgin olive oil
1/2 onion 1 tsp sea salt
2 Tbs honey/agave nectar or chili powder/hot sauce
Dice onions and garlic as fine as possible; the finer they are diced, the better the flavor spreads throughout the sauce. Combine all ingredients in a medium sauce pan. Whether you use 1 cup or 1 1/2 cup of beef stock will depend on how thick you want your sauce. Bring sauce to heat on stove at a low setting. Cover and simmer, stirring frequently. The longer it simmers, the more consistent the flavor. Usually 20 – 30 minutes.
^I bought thinner pork chops (they cook better) instead of stuffin’ em. Then put all the apple bacon stuff on the inside and held them together with toothpicks.. Function>aesthetics I say.
The crazy coconut nectar stuff they sell at Good Earth on Riverdale. You can rock some almond butter instead of syrup. The coconut nectar stuff is way too sweet to use as syrup IMO. Might work for some though.
Yummy pumpkin sorta pie
1/2 large can plain pumpkin
2eggs( or 1/2 cup egg beaters)
1/8- 1/4cup honey ( heat in microwave till runny)
3/4cup unsweetened almond milk
3/4 tsp pumpkin spice
Mix e everything together and pour into a safe casserole dish, approx 8x 11. Cook in microwave 16-18min until middle set. Cover for 5min. Eat warm or cooled.
Frozen Organic bananas, strawberries, mango
1/2 avocado
2 cups of Almond milk
2 tsp. of Really Raw Honey
2 TBSP of Raw Cocoa Powder
2 TBSP of Hemp Seeds
2 TBSP of Chia Seeds

Brook just made Tilapia filets lightly dusted with egg yolk and almond flour and pan fried in a little bit of olive oil….DELICIOUS!

I forgot, we used the pan drippings for gravy and I also added a few raisins to the baked apples. It was great!

Bake 30 – 35 minutes or unitl the tops are golden brown and a toothpick comes out clean. Let cool in the tins for 10 minutes before removing. Store in the refigerator.
Another recipe that I found that we have enjoyed is paleo Barbeque sauce. It can be sweet by adding honey or agave necgtar, or spicy by adding hot sauce. Either way, it is great on ribs, chicken, any meat really. Here it is.
1 6oz can tomato paste 2 Tbs Dijon or yellow mustard
1 to 1 1/2 C beef stock (to desired thickness) 2 Tbs apple cider vinegar
3 cloves garlic 1 Tbs extra virgin olive oil
1/2 onion 1 tsp sea salt
2 Tbs honey/agave nectar or chili powder/hot sauce
Dice onions and garlic as fine as possible; the finer they are diced, the better the flavor spreads throughout the sauce. Combine all ingredients in a medium sauce pan. Whether you use 1 cup or 1 1/2 cup of beef stock will depend on how thick you want your sauce. Bring sauce to heat on stove at a low setting. Cover and simmer, stirring frequently. The longer it simmers, the more consistent the flavor. Usually 20 – 30 minutes.
Extra sauce can be stored in the refrigerator.

^I bought thinner pork chops (they cook better) instead of stuffin’ em. Then put all the apple bacon stuff on the inside and held them together with toothpicks.. Function>aesthetics I say.

The crazy coconut nectar stuff they sell at Good Earth on Riverdale. You can rock some almond butter instead of syrup. The coconut nectar stuff is way too sweet to use as syrup IMO. Might work for some though.
Yummy pumpkin sorta pie
1/2 large can plain pumpkin
2eggs( or 1/2 cup egg beaters)
1/8- 1/4cup honey ( heat in microwave till runny)
3/4cup unsweetened almond milk
3/4 tsp pumpkin spice
Mix e everything together and pour into a safe casserole dish, approx 8x 11. Cook in microwave 16-18min until middle set. Cover for 5min. Eat warm or cooled.
